Sweet Potato
The presence in the Canary Islands of sweet potato, is evident from the sixteenth century.A species Ipomoea batatas,
is known in the Canary Islands by the common name of sweet potato.
It belongs to the family Convolvulaceae, is a herbaceous plant consistency, poise and creeping perennial grown as an annual although (lively) to be its edible root. In this sense, its cultivation cycle lasts between 120 and 150 days, depending on the variety.
The root of the potato is rich in starch and contains a significant amount of vitamin C and carotene (provitamin A). In its leaves has been Sweet Potatoreported the presence of a high content of polyphenols (phenolic acids and anthocyanin).
Potato consumption has been reported to have benefits for human. The health of people, because it increases immune activity and additionally has an antidiabetic effect.
Batata Lanzarote or "Colorada" is elongated and irregular, dark reddish skin and pale pink inside to off, fairly sweet flavor. This type occurs most during the summer.
Batata white or "Hutch" elongated, elliptical, less sweet than the previous, brown skin and white inside. Occurs throughout the year.
Batata egg yolk or "Patagallina" oblong, light orange skin and yellow interior, very sweet. The production is mostly in the winter months.
