Napolitana Sauce (Italy)
Ingredients for 4 people
500 gr. ripe tomatoes, 100 gr. onion, 30 gr. carrot, 10 gr. celery, 5 cl. white wine, 1/4 bunch fresh parsley,
2 gr. sugar, 40 gr. parmesan, 3 cl. Olive oil, 3 gr. salt, 1/2 gr. pepper, 1/2 gr. fresh oregano.
Preparation
Chop the tomatoes into small pieces, onion, carrot, peeled and finely celery, and parsley.
Put in a pan with the wine, a tablespoon of oil and sugar, and simmer, half covered, stirring occasionally, about 45 minutes.
When the sauce is thick, let cool slightly and go through the masher.
Season the sauce and add the oregano.
Serve with grated Parmesan cheese.
