Meat and Potatoes
Ingredients for 4 people
800 gr. veal, 800 gr. potato, 200 gr. onion, 15 gr. garlic, 300 gr. carrots, 15 cl. White wine from Lanzarote,
50 cl. Beef broth, 10 gr. Wheat, 10 cl. Olive oil, 1/2 gr. food coloring, 3 gr. Coarse salt, 1/2 gr. Black pepper, 1 bay leaf
Preparation
The first will leave well prepared meat, clean the excess fat and reserve.
Peel the carrots and cut them.
Then chop the garlic and mince the onion.
In a pot with oil fry the onion and garlic.
Fry until they turn color, then add the meat and stir well to also take color. You can brown a little but not much. Add salt, pepper and bay leaf.
When the meat color add the carrot pieces and flour and stir a bit.
Then add the white wine. Let the alcohol evaporate for 1 minute, then add the beef broth.
Add some food coloring or if you prefer you can use a little saffron and stir well.
Meanwhile prepare the potatoes. Peel and cut them into pieces. It is better to break a little cutting with the knife and giving a twist to the whole wrist cutting them with a knife. If we do it with the flick of the wrist the stew broth fit better. Reserve cualdo potatoes and lacks little meat is added potatoes.
