Fresh Tuna Meatballs
Ingredients for 4 people
800 gr. tuna,300 gr. flour, 200 gr. onion, 3 eggs, 3 gr. garlic, 3 cl. olive oil-, 5 cl. white wine, 15 cl. fumet,
1/2 bunch parsley, chopped, 1/2 gr. pepper, 1 bay leaf, 3 gr. coarse salt.
Preparation
We put the dough in the blender the chopped tuna, eggs, garlic, parsley and salt. When this list is passed to a slingshot, make balls, passed in flour and fry lightly.
Apart chop the onion, and put to fry in a pan with oil, peppercorns and bay leaf, when incorporated begins to brown the meatballs and a glass of wine. When the wine is reduced incorporate the fish stock and completed with water to almost cover the meatballs.
Cook for 15 minutes over medium heat, withdraw all meatballs least one and grind all we have left too loose salsa.Si let reduce over medium heat, if it comes out too thick add a little fish stock.
