Ingredients
1000 gr. bones and fish heads, 20 gr. onion, 20 gr. leeks, 50 gr. tomato, 3 gr. black peppercorns,
2 Lit. water,3 gr. coarse salt, 10 gr. parsley
Preparation
In a pot with water, place the bones and fish heads, with the onion, leek, tomato, black pepper and parsley and cook for 60 minutes over low heat, when the contained is reduced to more or less half, schools and testing salt.
