With the end of gofio, called the canaries (Aboriginal Gran Canaria) to the ground and then roasted barley. For its part,
the Guanches of Tenerife's called ahoren. In the process of colonization, the word gofio been general throughout the islands to name the food made with roasted cereal flour and then ground. The Canary emigration to America was responsible for extending this food product across the continent and is so in many countries Americans currently consume, taking different names and incorporating local elements, such as cocoa, sugar and others. In recent times in the Canary Islands, the mills have increased their offer to consumers by introducing new cereals such as sorghum, millet and rice, and developing a range of new gofio mixtures.
