Couscous with chicken (Morocco)
Ingredients for 4 people
250 gr. Medium grain couscous, 250 gr. Chicken breast, 10 gr. garlic, 50 gr. onion, 100 gr. tomatoes,
100 gr. Peppers, 100 gr. zucchini, 3 gr. Coarse salt, 1 g. Black Pepper, 1 g. White Pepper, 1/2 gr. cinnamon, 3 cl. Olive oil, 1/8 gr. cumin, 1/8 gr. ginger, Grainy mustard, cloves, Half on saffron, 25 cl. Beef broth or water.
Preparation
Cut chicken into thin strips. Do the same with the peppers and pica the tomatoes. Pela the onion and cut into juliana.
Sauté spices in a pot with a little oil to come out all its flavors.
Incorporates the garlics with the onion, the peppers and tomatoes, removes and kitchen to living fire until tender.
Add chicken, and stir a little.
Warms the broth, poured over the couscous and book until the grain become hydrated.
Then add the couscous to the pot with the vegetables, add salt to taste and mix well.
