Cordon Blue with Mushroom Sauce
Ingredients for 4 people
600 gr. Pork Tenderloin, 4 slices of ham, 4 slices of cheese to melt, 2  Eggs, 50  gr. tomato, 50  gr. onion,
1 cup all-purpose flour, 1 cup breadcrumbs, salt and pepper.
Mushroom sauce
1/2  Onion, 2 cloves of garlic, 150 gr. mushrooms, 7 cl. cream, 20  cl. Gravy, Salt and pepper.
Preparation
Crush the two fillets with a roller as thin as possible on both sides and season.
Place a slice of ham with cheese and a slice of tomato and some onion over a steak and then place the other fillet on top.
Pass the sandwiches in flour and then in beaten egg and then breadcrumbs. and tighten them to stay well compact.
Fry in a pan with hot olive oil over low heat so that they become good inside and not burn out.
When you are ready to share the reserve.
Prepare the sauce, clean the mushrooms and cut into slices.
Cut the onion into small cubes and fry garlic prints and simmer in a pan with a little oil.
When browned, toss the mushrooms and a little pepper and salt.
Saute until everything is done, add the beef stock, cream and blue cord.
Cordon bleu Place on a plate and add the sauce.
