Chimichurri Sauce (Argentina)
Ingredients
1/2 bunch of parsley, 1/2 bunch basil, 15 gr. garlic, 50 gr. onion, 1/4 chopped green chili (optional), 1/5 gr. oregano,
1/5 gr. cumin, 1 pinch of laurel, rosemary or thyme, 20 cl. Olive oil, 5 cl. vinegar, 2 gr. salt, 1/2 gr. Black pepper.
Preparation
Chop the parsley, the garlic, chilies, onion, basil leaves and add a little paprika. We add the olive oil, lemon, oregano, cumin, bay leaf, rosemary and vinegar. Then add salt and pepper.
Preferably one or two days to leave the mixture in a clear jar in a cool place so that all the flavors integrate well, or at least two hours.
