Ingredients for 10 servings
150 cl. water, 700 gr. Morcillo, 100 gr. celery, 150 gr. carrots, 150 gr. onion,
100 gr. leeks, 50 gr. celery, 1/4 bunch parsley, 1 bay leaf, 3 cl. Olive oil.
Preparation
To make a good soup always place the meat in cold water or cook frozen.
Cover the meat with enough water in a pot, can be covered. Add the vegetables, peeled and coarsely, salt, oil, herbs and spices. When starting to boil reduce heat, simmer so slowly.
Let cook covered over low heat for at least 2 hours, skimming the surface occasionally to remove impurities. If you consume a lot can go slowly adding water.
Once allowed to warm ready, strain and reserve the meat. The can take to serve with the soup or as a main course.
If no fat is desired to have in the broth, must be cooled in the refrigerator.
The broth, once cast, can be used to freeze time or to have on hand.
This broth is the basis of many sauces, like salsa Spanish, when enriched with a dark roux of flour and butter toast.
