Back to old vinaigrette and fresh herbs
Ingredients for 4 people
1400 gr. Cherne, 4 cl. oil, 30 gr. garlic, 30 gr. flour, 1 chilli, ½ bunch cilantro, 5 cl. fish broth,
5 gr. Coarse salt, ½ gr. white pepper, 600 gr. potato
Preparation
It gets old fillets skin side up in the oven with olive oil, shallots, garlic and white wine, with the oven on high for 5 minutes. Then add the tomato and herbs. Increase oven temperature to high heat, giving a boil. Add a few drops of vinegar, cover with vinaigrette, and test the seasoning.
