Anchovies in Vinegar

Ingredients
1000 gr. anchovies
50 gr. lemon
3 gr. coarse salt
15 cl. Virgin olive oil
10 gr. garlic
parsley

Preparation
We prepare anchovies fillets removing the head and backbone and wash. Once they are very clean, we put a source water, vinegar and salt. Let stand 8 to 10 hours in the fridge.
After this time, drain them and put anchovies on a tray and put the oil on rolled minced garlic and parsley.
Raw fish should previously freeze 24-48 h. before consumption to avoid the risk of anisakis.
