Higado en carajaca
Ingredients for 4 people
1 kg. Liver of pig or cow, Pepper ½ picona, 6 cloves of garlic, ½ cup oil, ½ cup vinegar, cayenne, oregano,
thyme, laurel, parsley, salt.
Preparation
First of all, you have to take the liver and fillet it into thin and small pieces which are then put in a bowl.
Besides a paste is made with the rest of the ingredients, and once you have achieved a kind of dough or batter, add a splash of oil and vinegar. This liver is marinated crushed and allowed to stand for about 4 or 5 hours at least.
After this time are being pulled one by one the fillets to fry with a little oil. Then covered with the remaining marinade and boil for a few minutes.
